What do you need to know
This is a Brazilian natural coffee. More specifically, its a single estate coffee from the Cerrado Mineiro region. It is an all round crowd-pleaser that works across brewing styles and methods. It's particularly good as the base of milk drink such as a flat white, cappuccino, or milky filter, while it still has a fruiter side if drunk black.
The process
It's a natural process. This means that the coffee cherries are dried with the fruit still on before being hulled to remove dry skin and pulp. As the coffee remains in contact with the fruit as it drys, the resulting coffee often has a full body, high sweetness, and a fruity range of flavours.

This coffee is sourced from many small producers and is sourced through Covoya Specialty Coffee's Café Delas Program. Café Delas was created to help women farmers access the resources, knowledge and voice they need to grow their operations to the fullest potential. Every Café Delas coffee is sourced 100% from women farmers and for every sale, a portion of the profit is reinvested in programs that promote gender equality and empower women in the field.
The cultivars
Mundo Novo: A classic Arabica cultivar, originating as a hybrid between Typica and Bourbon coffee varieties. Very common in Brazil and typically provides a sweet & smooth coffee with a fuller body. Catuai: A widely grown cultivar known for its balanced flavor and adaptability. It is a hybrid of Mundo Novo and Caturra.
